Rajshahi, Mar 6 (V7N) - Even amidst the rush of modern Iftar items during Ramadan, traditional Shahi Phirni and Batar More Jilapi still hold their place in Rajshahi. These dishes have been an integral part of Rajshahi's Iftar culture for ages.

This Shahi Phirni from Rahmania Hotel and Restaurant at Ganakpara More has been made since 1950. The phirni, arranged in small earthen pots, is being sold for 35 taka each. Entaz Ali, a resident of the city's Talaimari Shaheed Minar area, said that although many other things are bought for iftar , phirni holds special importance for senior citizens like them.

Riaz Ahmed Khan , the current owner of Rahmania Hotel, said that his grandfather Anisur Rahman Khan first started making and selling this phirni. Then his father took over the business , and now he is carrying on the tradition.

Riaz Ahmed said , “ Initially, a bowl of phirni was sold for four annas , now it is sold for 35 taka. 400 bowls of phirni were sold on the first day of Ramadan , which will increase further. Last year, up to 1,000 bowls were sold every day. ”

The main ingredient of phirni is pure cow's milk , along with rice powder , sugar, and some fruits.

A shop located at Batar More in the city sells jilapi in a variety of shapes , known as ' Batar Morer Jilapi ' . The shop has no name or signboard , yet long lines of customers are seen every day. Although jilapi is sold all year round, its demand increases several times during Ramadan. Jilapi is being sold for 220 taka per kg.

Hafiz Uddin, a resident of Gorhanga area, said , “ The taste of jilapi here is different. I buy jilapi from here for at least 10-12 days during Ramadan. ”

Currently, Shoaib Uddin's four sons run the shop. One of them , Md. Hasim Uddin, said , " This shop has survived with trust for so many years because of honesty and good quality materials. "

Md. Safat, an artisan who has been making jilapi for 42 years, said , “ Jilapi is chewy and delicious only when made with the right ingredients and quantities. ”

These two traditional Iftar items of Rajshahi are still appreciated as a special attraction of Ramadan.
